The Art of the Perfect Instant Coffee

There is a widespread misconception that instant coffee is merely a compromise, a sacrifice of quality for convenience. Pulpoffe exists to correct that misunderstanding. Great instant coffee is the result of exceptional raw material and careful preparation. Here is everything you need to know.

Water Temperature: The Single Biggest Variable

Most people make instant coffee with boiling water. This is a mistake. Water at 100°C scorches the coffee solids, producing a harsh, bitter flavour. The ideal temperature is 88 to 92°C. If you do not have a thermometer, simply let your kettle rest for 60 to 90 seconds after boiling.

The Ratio

For Pulpoffe Gold and Silver ranges, we recommend 1.5 to 2 teaspoons (3 to 4g) per 200ml of water. The Diamond range, being a premium freeze dried concentrate, requires only 1 to 1.5 teaspoons for the same volume. Taste and adjust from here because coffee is personal.

The Bloom Method

Before adding all your water, add just a small splash of about 30ml to your coffee powder and stir to form a paste. Wait 20 seconds. This technique, borrowed from filter coffee brewing, allows the coffee to bloom and releases its aromatics before dilution. The difference in fragrance and flavour is remarkable.

Granular vs. Spray Dried

Pulpoffe's granular Agglo coffees are produced by agglomerating fine spray dried particles into larger, more porous granules. These dissolve more readily in water and release flavour more evenly. Spray dried coffees such as Prime 70 and Imperial 60 have a finer texture and integrate more quickly, ideal if you are in a hurry.

Cold Brew Instant

Yes, you can make cold coffee with Pulpoffe. Dissolve your usual dose in 30ml of warm water first, then pour over ice and add 180ml of cold water or milk. The Diamond Freeze Dried range is particularly exceptional served this way.
